Turmeric chicken, apple slaw, and mint yogurt sandwiched between slices of our Classic White Artisan loaf – this is definitely one to try.

Ingredients: 
  • Two slices of Classic White Artisan Loaf
  • A handful of spinach leaves
  • For the chicken:
  • 2 sprigs of oregano, chopped
  • 1 tsp ground turmeric
  • 2 tbsp olive oil
  • 2 chicken breast
  • Salt and black pepper for seasoning
  • For the apple slaw:
  • ¼ red cabbage, quartered and shredded
  • ½ apple, cored and coarsely grated
  • 1 carrot, peeled and coarsely grated
  • 2 spring onions, finely sliced
  • 1 tbsp chopped fresh parsley
  • 50g fat-free Greek yogurt
  • The juice of ½ lemon
  • 1 tsp cumin seeds
  • Salt & pepper
  • For the mint yogurt:
  • 200g of natural or Greek yogurt
  • 2 sprigs of mint, chopped
  • The juice of ½ lemon
  • ¼ clove of garlic, finely chopped
  • Salt and pepper
Method: 
  1. Create marinade with the oregano, turmeric, olive oil, salt and pepper, and coat the chicken.
  2. Fry the chicken in pan until cooked through
  3. For the apple slaw, lightly toast the cumin seeds in a pan and leave aside to cool.
  4. In an small bowl, mix the lemon juice, yogurt, salt and pepper.
  5. In a larger bowl, combine the cabbage, apple, carrots, spring onions, parsley and toasted cumin seeds until well mixed.
  6. Stir in the dressing to coat evenly.
  7. For the mint yogurt, mix together the yogurt, mint, lemon, garlic, salt and pepper in a bowl.
  8. Assemble the sandwich using two slices of our Classic White Artisan loaf and a base layer of spinach and enjoy!
